They can be used to measure flow rates of all incompressible fluids (gases with low variations in pressure as well as liquids). They are generally used to measure flow rates of liquids.
Here, the flow is accelerated gradually in converging section with subsequent gradual decrease in pressure. Here, the entire pressure drop occurs instantly, when flow passes through orifice.
